When we hot smoke salmon, we don't do like others and hot smoke straight away. Instead, the fish is cold smoked first. Next, we put two fillets together - belly to back - and hot smoke them. It gives a fantastic smoke flavor throughout the fish, an even core temperature and good cooling.
It's a unique way to hot smoke salmon, and that's why we've also patented the word double-smoked.
